One way I have been preparing for the end-of-my-world-as-I-know-it, is that I have started cooking and baking in higher volumes to freeze all of the leftovers. On the plus side, I am really enjoying it! On the minus side, I am not sure I am really good at it. It is also hard work, takes a lot of planning, and makes for some large grocery bills; but hopefully, all this work will make for less work, less planning, and smaller grocery bills down the road. I have never frozen prepared meals or baked cookies, so we will just have to wait and see how it turns out. Thanks to Pinterest and family and friends, I have a ton of recipes to try out. So far, I have made the following:
- Vegetable soup:

This turned out OK. It was not quite as flavorful as I would have hoped, but it could be that I did not add enough salt and pepper (I do not really understand "add to taste") or that I had to use water because we did not have enough vegetable stock. I would try it again.
- My mother-in-law's chili:
(No picture, sorry. The camera is packed in the hospital bag). This turned out great. It is pretty soupy, but that is how Kyle likes it. It is also pretty spicy, but again, that is how Kyle likes it. I liked it too.
- Black bean and corn salsa chicken:

We are having this for dinner tonight. It smells great and was super easy to prepare.

These are pretty tasty, but really crispy. It could be because I used vegan butter or maybe I just baked them too long. They did not look done at 14 minutes.
That is all for now. I have a ton more recipes to try, but I am trying to space it out so I do not burn out and/or drain the bank account. I hope I will still be able to bake and cook once the baby comes, or is that part of my world that is ending?!?
