High Volume Cooking and Baking: Round One

You would think by the way I have been acting lately that the world is coming to an end once our Baby arrives.  In a way, my world, as I know it, is coming to an end, but I have to keep reminding myself that it just means a new world, not no world.

One way I have been preparing for the end-of-my-world-as-I-know-it, is that I have started cooking and baking in higher volumes to freeze all of the leftovers.  On the plus side, I am really enjoying it!  On the minus side, I am not sure I am really good at it.  It is also hard work, takes a lot of planning, and makes for some large grocery bills; but hopefully, all this work will make for less work, less planning, and smaller grocery bills down the road.  I have never frozen prepared meals or baked cookies, so we will just have to wait and see how it turns out.  Thanks to Pinterest and family and friends, I have a ton of recipes to try out.  So far, I have made the following:

  • Vegetable soup:

This turned out OK.  It was not quite as flavorful as I would have hoped, but it could be that I did not add enough salt and pepper (I do not really understand "add to taste") or that I had to use water because we did not have enough vegetable stock.  I would try it again.

  • My mother-in-law's chili:
(No picture, sorry.  The camera is packed in the hospital bag).  This turned out great.  It is pretty soupy, but that is how Kyle likes it.  It is also pretty spicy, but again, that is how Kyle likes it.  I liked it too.

  • Black bean and corn salsa chicken:

We are having this for dinner tonight.  It smells great and was super easy to prepare.

  • Chocolate Peppermint Cookies:

These are pretty tasty, but really crispy.  It could be because I used vegan butter or maybe I just baked them too long.  They did not look done at 14 minutes.

That is all for now.  I have a ton more recipes to try, but I am trying to space it out so I do not burn out and/or drain the bank account.  I hope I will still be able to bake and cook once the baby comes, or is that part of my world that is ending?!?

Suggestion Time

I do not do this very often, mainly because I think my readers consist of my mom, husband, and sister, but I am in need of help.  Besides, even if only my mom, husband, and sister respond, that will still be a big help.

I want to make a bunch of dinners that I can put in the freezer and just pull out and heat up once baby comes, but my dinner recipes are very limited.  Does anyone have any ideas or recipes for me?  We are usually a pretty boring meat-and-potatoes kind of couple, but I would not mind mixing it up a bit.  Also, Kyle is lactose intolerant, but we have gotten pretty good at using substitutions.  Vegetarian options are welcome.  No fish (yuck!).

Thanks in advance!

Also, if anyone has any ideas on how to make a fat face appear skinnier, I'll take those as well.

Doughnut Muffins

I made these muffins this weekend.  Erin made them once and I thought they were fantastic, so I made a dairy-free version for Kyle.  He cannot stop talking about them.

Strawberry Cake

I am trying to savor the last summer, so last week I made a strawberry cake.  Yum!

Mini Blizzard

I could not be happier.  Dairy Queen now has a mini blizzard!!  I could never finish the small size and if I tried to save the leftovers in the freezer, it would always get freezer burn.  So, I am very excited that they now have a mini blizzard, which is the perfect size.

I dragged Kyle to Dairy Queen this weekend for a Snickers mini blizzard.  I see many more visits in our future.  Now, if I only I can get Dairy Queen to make a bubble gum blizzard...
